It's amazing how things from your past suddenly pop up--and often they are good things. What astounds me is the clarity of the memory--and if it isn't clear at first, how amazing the mind is to find that 35 year old memory--
For me today it was Turkish Barley Buttermilk Soup--I couldn't remember how to make it, it's been years and years--I had the name of the book my mom originally had made it from, all I could remember was it had a planet on it--I just kept visualizing in my head that planet (whether it really has a planet or not it helped me come up with the title) Diet For A Small Planet!! I used to hate that book, mom was always sticking soybeans into everything...LOL
They have it on Kindle now, can ya believe it? SO yes, I downloaded it and also found the recipe online...so this weekend I am making it--my other question is I wonder if I can substitute Quinoa for the barley.....
Will add a picture after I actually make it--I am going to use my homemade yogurt as well in place of the buttermilk--see how it goes :)
Turkish Barley-Buttermilk Soup (From Diet For A Small Planet)
(Makes 4 Servings)Saute in heavy pot until golden:
oil, as needed
2 lg. onions, chopped
Add and stir until lightly toasted:
1 cup barley
When onion is well browned, add:
5 cups seasoned stock
Have ready:
2 cups buttermilk or plain yogurt
1 tsp. dill
butter
------------------------------------
Cook until barley is well done--about
45 minutes-1 hour (or 25 min. in a
pressure cooker). Remove from heat,
let cool a bit, and add the buttermilk
slowly aand more stock if too thick.
Sprinkle in dill to taste and butter.

Later--
I didn't have Barley or buttermilk so this is what I made :)
3/4 C Quinoa
1 large Onion Chopped ( I used a red one from my garden)
Sautee Onion in oil as needed until golden, add quinoa, sautee for a minute or so
Then add 5 Cups stock--Vegetable, Beef or Chicken whatever you prefer
Cook for about 445 minutes or until the Quinoa is translucent in the middle and you can see the outer ring.
Remove cover, let cool a little then add 2C non fat unflavored yogurt, stir in and add more stock if too thick. Spinkle in dill to taste, add butter if you wish.

Peanut Butter Vi Power Bars

Peanut Butter Vi Power Bars
Ingredients:
1 cup dates
1/4 cup water
1/4 cup natural peanut butter, smooth or crunchy
1/4 cup ground flaxseeds (2 tbsp whole) (Or use Chia Seed)
1 cup Vi Shape Protein
1/8 tsp sea salt
1/2 cup dried apricots, diced
1/2 cup Grape-Nuts cereal, divided (Or Steel Oats)
Instructions:
In a food processor, blend together dates and water.
Add peanut butter and process until smooth, adding more water as needed.
Add Vi Shape, flaxseeds and salt and process to combine thoroughly. Add apricot pieces and half of the Grape-Nuts. Pulse just enough to incorporate them into the mixture.
Place a two-foot-long piece of wax paper in an eight-by-eight-inch dish, with half of the wax paper hanging over the edge. Pour mixture into dish. Use the wax paper to press the mixture evenly in the pan. For best results, place in freezer for one hour to firm. Cut into eight pieces. Roll each piece in the remaining cereal to coat evenly. Wrap individually and refrigerate or free

Day 12 Transformation-The Olympics
The Olympics has affected me,
watching
all these positive stories
of people with a dream,
people with goals and
the ability to step out every day
and work towards those goals.
You can achieve SO much if you just believe and act.
Makes me wish that the idiot box (aka TV) had
inspirational and positive messages more often;
It is sad to think that you only really see these types of "spots"
during the Olympics and Major Sporting
events like the Super Bowl.
I Didn't do everything right but that is life :)
It is the small steps you make that direct your course.
My transformation is a fluid process,
something that is not rigid,
set in stone or something that will be seen tomorrow
or even next week.

Reading this quote this morning really convicted me--how often we approach our outside worlds through the filters of our inside world--the feelings inside us--about ourselves--color our perceptions of other people and situations. These feelings then feed on one another and grow--being intolerant of others' shortcomings that we see in ourselves causes us to become even more angry--it is cyclic--some of us can easily turn the anger inward at ourselves while others lash out at others and don't appear to have the introspection needed to look within and make change. Neither is an emotionally healthy place to be.
Change always begins with BEING, not DOING------
BE the person you want to become--
if you want love, BE loving
if you want peace, BE peaceful
if you want good friends, BE a good friend
if you want joy, BE joyful
and the list goes on---
this principle of life is so true---
who when they are bitter and angry are happy? One can SAY they want to be happy but unless they BE happy, happiness won't come to them.

Life Deposits-Transformation Day 2
Planning out my day's food and exercise strategy knowing I have a 7 hour round trip drive I committed to make--I said I would do it and I need to do what I say consistently not just when it's easy.
Sitting here I thought about the story with the pennies--how it is better to be given/save a penny doubled every day rather than a million dollars all at once. Losing weight, getting healthier is the same kind of thing. We make small changes, make deposits into our "health bank account" every day by the choices and decisions we make. At first it may not look like its moving along and we question our decisions, our plan, our goal--it is those small focused consistent daily actions that create the habit and create the life/health/weight we want--I loved reading Darren Hardy's book "The Compound Effect" because this is exactly what happens--in everything you want to be successful at-relationships are no different.
I have been focused on the idea of transformation now for a week, really delving into what I want to change--I want to be happy. That sounds so simple, yet so complex. Finding what makes you happy is just as much of an "exercise" as determining your goals and plans for your life. If you haven't already, you have got to read "Get Happy Now" then click on the title here, these two books are at the top of my "Hot Summer Reading" list this month.

Day 1 Of My 90 Day Transformation
Increase water intake to 110 oz-YES
Cardio -YES 30 minutes
Eating-ON TARGET
1350 calories is my goal-hit under 1100
What I ate today
Breakfast:
Vi pack coffee with NF milk and stevia
Vishake- half frozen banana, 4 frozen strawberries, 1 cup NSA Flaxmilk
2 Scoops VI Shape
30 Minutes Cardio with recovery 2 scoop Vi Shape shake, water and a PRO
2 sets 10 squats 3 sets 15 ab crunches-
LUNCH-Magazine Debut/Challenge Party-sampled shakes, the equivelant of one shake with 1/2 cup fruit and and 1/8th of a banana, unsweetened flaxmilk
DINNER: rice tortilla, 1 slice LF Cheddar cheese 2 oz sliced turkey 1/4 C homemade avocado Salsa
Since I have about 250 calories left ( I didn't eliminate the exercise calories--that day may come) I plan to eat some more turkey with avocado salsa sans the tortilla with a little cheese--that should bring me right where I need to be
So I had actually 3 shakes today and 2 meals. Having had GBSx, my meals are what for a lot of people are their snacks or "light" meals--The shakes are definitely my friend-quality protein low calorie low fat.
Plan for tomorrow:
Cardio 30 minutes plus Core exercises Ab cunch, Superman, Toe Touchers

originally from NJ but currently coming to you from Kingman Arizona. I
was introduced to the Challenge by Cheryl Ables back in April 2012 and I
am so grateful for that moment in time. This is my second 90 day challenge, you can watch my first video for the results but I’ll briefly recap it here. I
started my first challenge off with a sense of excitement but
skepticism as well-I mean I have addressed these same issues time after
time after time. I have been overweight my entire life- I even went to
the lengths of having gastric bypass surgery in 2002—I lost 160# and got
down to 178# (for a day), over time my weight steadily creeped up –yo
yo’d, in essence nothing is really different then before the surgery, I
am just at a smaller place. Losing weight is tough but keeping it off is even harder. I honestly thought at that time that once I had the surgery and lost weight, this “issue” would go away. In my first 90 days, I lost 20# and met my goal of reaching the rank of Regional Director. So
today is a new day! My challenge goal is to lose 30# and exercise to
decrease my body fat % which in my mind means I decrease fat and improve
lean muscle, increasing my overall health. I will be
using the Transformation kit which means I will be replacing 2 meals a
day with the Vi Shakes and eating one healthy meal. Because
of my altered stomach, I will also have two small snacks between shakes
to avoid a drop in my blood sugar. As my exercise increases, I plan to
add a recovery ViShake after exercise, just water and Vi Shape.
Ok
so here it is.. I want on overall body transformation so I measured a
lot of spots although my lower body is what I visually focus on—I know
these numbers will be smaller hence the only reason I am putting them
out here today! I changed scales which for any chronic dieter is hell =D
I weighed 228.4 this morning, my body fat % was 38.1. My measurements are:
CHEST: 41.5
UPPER ARM R 12.75 L 13
CALF R 19.5 L20.5
UPPER THIGH R 29.5 L 31
WAIST 42 HIPS 53.5
Action Plan:
FOCUS and CONSISTENCY are my action words
Increase water—target is 110oz a day
Increase Cardio—I have been sporadic in this area, by the end of my challenge I will be doing an 45minutes or more a day
Be consistent with my exercise program, Sunshine Harmon of Sunnygirlfitness developed a program for me, I need to follow it.

Congratulations to the newest 5-Star Ambassador in our glorious community Tina Hockmuth and Ken Hockmuth!! As told by Rachel Jackson: Ken and Tina's journey with Vi started just 8 months ago where she was weeks away from delivering her 4th child, facing financial devastation including foreclosure while owning failing construction business in Iowa. Bringing her industry experience, although her income never capped a few thousand a month - Tina knew that with belief and hard work ANYTHING was possible.
